Summer 2015 Week 2 (Jun 23rd)

Starting to look like summer. I would remove the greens on the radishes, beets, and turnips — they’re completely edible, but they get a little bug eaten and they make the roots go soft in the fridge. I had to go through my salad, spinach, and beet greens and remove the bruised leaves. With the warmer weather, they bruise easily, but taking out the bad “apples” lets the rest stay good all week. Treat the beet greens like you would hearty spinach — it cooks well, and has the metallic crunch that spinach does.
