I’ve got an excess of greens here, and I’m guessing you do too. Luckily they shrink quickly if you cook them down. Boil em, fry em, stick em in a stew. I made pasta sauce with spinach this week, as well as sweet braised onions with chard. Armenian cucumbers are actually melons, but they taste like cukes. Also, people who can’t eat cucumbers can usually eat Armenians with no complications.
