We’re going to have beautiful salads this week with the big bag of a lettuce mix and 3-4 kinds of radishes. From past years the black radish is strongest and watermelon mildest. Slice or matchstick radish tossed with salt for half an hour or so and then rinsed will slightly wilt and take away their bite for a simple salad with rice vinegar and green onions. Try a recipe for bibimbap instead of soup if you’re still working through last week’s box. And here’s an idea for greens that I will definitely be using.
