Another colorful box this week! I really feel like this weekly box of vegetables has kept us healthy. Last weekend was especially busy and I slacked on my usual goal to get through our whole medium box. Now I have my first cold since Fall started. This recipe looks perfect for our butternut squash and handful of brussels. I remember the purple radish being really mild, especially since it’s still cold outside and heat hasn’t spiced them up. Add it to a slaw with the cabbage and carrots or a quick pickle. I love the quick slaw/kimchi here to add to ramen or tacos or sandwich, like avocado toast with this broccoli spinach soup. I have an affinity for pureed soups, so here’s a reminder about the carrot soup with collard tangles. Oh, and don’t forget to eat the radish tops right away. A pesto looks like a fast, versatile way and keeps them good a longer.
